Canadian Whisky – 45% ABV
Here we go! I had promised a proper review on this one and I’m happy to share my thoughts after spending a bit of time with it.
This whisky is 100% corn distillate that’s aged in new American oak for 19 years. Though the source of the distillate isn’t revealed, it is mentioned that it’s 100% Canadian. The 19 year old whisky is then blended with roughly about 5% Oloroso Sherry.
Using the unique abilities under the Canadian laws to allow whisky to be blended with another spirit of up to approx 9% after maturation.
Initially, I assumed this would be an absolute Oloroso bomb and while it does have quite a good amount of sherry influence, there are still some great notes of vanilla, spice and a richness that balances really well with the sherry.
As I continue through the dram I pick up some notes of chocolate, red berries and a bit on cinnamon.
It has a solid Bourbon like profile, with a creamy mouthfeel and the rich and nutty notes from the Oloroso.
Overall, the whisky is very well balanced. The Oloroso is blended well and to an extent that allows the whisky to still profile it’s aged characteristics without being masked by the Sherry.
I am thoroughly enjoying this pour, and although it’s sourced distillate and not from @paradigmspirits (they’re still too young), it showcases the blending talent and the promising bright future releases that they possess as a distillery and team.
